Here it means something concrete: the way soil, climate and topography interact to make these wines the way they are and not some other way.<\/p>\n<p>The soil is clay, and in several parcels it is full of marine fossils \u2014 what is left of the time these hills lay under the sea. The clay holds water and gives body and structure; the fossil content brings salinity.<\/p>\n<p>The climate is a hill climate, but with the Adriatic a few kilometres away and the Casentino Apennines at our back. Nights stay cool even through the hottest summers, which is why our wines carry alcohol and aromatics together rather than one at the expense of the other.<\/p>\n<p>What comes out is full, warm, markedly savoury. Dense cherry and blackberry, silky tannins, and a long saline finish that asks for the next bite. These are not light wines, and they do not pretend to be.<\/p>\n\n\t\t<\/div>\n\t<\/div>\n<\/div><\/div><\/div><\/div><div class=\"vc_row-full-width vc_clearfix\"><\/div><div data-vc-full-width=\"true\" data-vc-full-width-init=\"false\" data-vc-stretch-content=\"true\" class=\"vc_row wpb_row vc_row-fluid vc_custom_1617308337246 reverse_columns_mobile vc_row-no-padding vc_row-o-equal-height vc_row-o-content-middle vc_row-flex\"><div class=\"wpb_column vc_column_container vc_col-sm-12 vc_col-lg-6 vc_col-md-6 vc_col-has-fill\"><div class=\"vc_column-inner  vc_custom_1636039015126\"><div class=\"wpb_wrapper\">\n\t<div class=\"title-subtitle-box\" style=\" text-align: left;\">\n\t\t<h2 style=\" font-style: normal;\">Twenty hectares, ten varieties<\/h2>\n\t<\/div> \n\t<div class=\"wpb_text_column wpb_content_element  vc_custom_1788532097955\" >\n\t\t<div class=\"wpb_wrapper\">\n\t\t\t<p>We grow the historic grapes of Romagna, the ones that have had a century or more to settle in here: <b>Sangiovese<\/b>,\u00a0<b>Albana<\/b>,\u00a0<b>Trebbiano<\/b>,\u00a0<b>Pagadebit<\/b>,\u00a0<b>Famoso<\/b>\u00a0and\u00a0<b>Cagnina<\/b>.<\/p>\n<p>Alongside them we have planted selected clones of\u00a0<b>Cabernet<\/b>,\u00a0<b>Merlot<\/b>,\u00a0<b>Pinot Bianco<\/b>\u00a0and\u00a0<b>Chardonnay<\/b>-  not to chase an international palate, but because on these soils they gave results worth exploring.<\/p>\n<p>The harvest is done entirely by hand, with the fruit carefully sorted. Thick-skinned, with an acidity that carries it through years in bottle and a structure no other white in Romagna has.<\/p>\n<\/div>\n\t<\/div> <\/div><\/div><\/div><div class=\"wpb_column vc_column_container vc_col-sm-4\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\">\n\t<div class=\"gg-infobox\" style=\"text-align:left;\">\n\t\t<p class=\"subtitle\" >Famoso<\/p>\n\t\t<div class=\"description\" ><p>A native Romagnolo variety that had almost disappeared before being brought back over the last few decades. Aromatic without being sweet: peach, apple, jasmine.<\/p>\n<\/div>\n\t<\/div> <\/div><\/div><\/div><div class=\"wpb_column vc_column_container vc_col-sm-4\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\">\n\t<div class=\"gg-infobox\" style=\"text-align:left;\">\n\t\t<p class=\"subtitle\" >Pagadebit e Cagnina<\/p>\n\t\t<div class=\"description\" ><p>Two names straight out of a farming economy.
